Step 1

Put the cider in a large saucepan and bring to the boil. Simmer briskly until evaporated by half (about 15 minutes). Meanwhile, cut the apples into 2-3cm chunks, discarding the cores.

Add the apples and honey to the cider and continue to simmer until the apples are soft and the cider reduced to a syrupy sauce (about 10 minutes). Tip into a small, ovenproof dish (about 1 litre).

Step 3

Preheat the oven to 200ºC, gas mark 6. Put the sugar, flour, oats and pecans in a mixing bowl with a pinch of salt. Add the butter and rub together with your fingertips until you have a clumpy mix, then sprinkle over the fruit, piling it slightly higher in the middle. Bake for 25-30 minutes until the topping is golden. Stand for 5 minutes before serving with crème fraîche or vanilla ice cream, if liked.
