Step 1

Cut each tomato into 6 wedges. Tip into a large bowl and season with salt. Add 1 tbsp oil, the chopped olives, rocket and croutons, then toss together until evenly combined.

Step 2

Divide the salad among 4 plates, then top with the bresaola slices and dollops of ricotta. Sprinkle over the lemon zest and freshly ground black pepper. Drizzle with the lemon juice and remaining 1 tbsp olive oil to serve.
