Preheat the oven to 350°F (180°C).

In a bowl, mix together the butter, miso, minced garlic, thyme, lemon zest, chili oil, and 1 teaspoon of the salt. Set aside.

Prepare the chicken by removing the giblets from the cavity.

Next, place the chicken breast side down on a cutting board. Starting at the end, cut along both sides of the backbone with a sharp knife or kitchen shears. Remove the backbone.

Season chicken with the remaining 1 teaspoon salt. Slather the miso mixture evenly over the chicken, and sprinkle all over with the garlic powder and smoked paprika.

Step 6

Place the chicken on a baking sheet, and roast in the preheated oven until the internal temperature of the thickest portion of the meat reaches 165°F, about 40 minutes, basting every 15 minutes with juices from the chicken.
