Step 1

Preheat the oven 200ºC, gas mark 6. Fry 100g lardons (no extra oil needed) for 2-3 minutes, until lightly golden and the fat starts to run.

Step 2

Spread the cheesy filling from the mushrooms over the pizza base, then slice the mushrooms and scatter over with the lardons and some washed spinach leaves.

Step 3

Drizzle with a little olive oil, season, then bake for 15 minutes, or until the pizza base and mushrooms are piping hot and the lardons are cooked through and sizzling.

Step 4

Dress the remaining spinach with a little oil and vinegar, season, then serve.
