Preheat the air fryer to 350°F (180°C). Grease the air fryer basket with avocado oil spray.

Make the dough: In a large bowl, add the self-rising flour and Greek yogurt. Use a spoon to mix until a dough forms. The dough will be a bit sticky. Turn the dough out onto a floured surface, dust the top with flour, and bring the dough together with your hands. Knead the dough 3-4 more times, until it becomes smooth and moldable.

Divide the dough into 8 equal pieces. Use your hands to roll each piece into a ball, then flatten with your fingers.
