Preheat the air fryer to 325°F (160°C). Grease the air fryer basket with avocado oil spray.

Make the coating: In a small bowl, mix the granulated sugar and cinnamon until well combined. Set aside.

Make the dough: In a large bowl, add the self-rising flour and Greek yogurt. Use a spoon to mix until a dough forms. The dough will be a bit sticky. Turn the dough out onto a floured surface, sprinkle the top with some more flour, and bring together with your hands. Divide the dough into 6 equal pieces, then divide each piece into 4 smaller pieces, for 24 pieces total.
