Step 1

To a large skillet on medium heat, add the diced apples, cinnamon, nutmeg, vanilla extract, brown sugar, and lemon juice. Stir and cook for 2 minutes, or until a thick, syrup-like consistency. Remove from heat.

To a jar add oats, Greek yogurt, maple syrup, almond milk, and the apple mixture (reserving a few tablespoons for topping). Stir well and refrigerate for at least 10 hours, or overnight.
