Make the dressing: In a small glass or stainless steel bowl, whisk together the oil, vinegar, mustard, honey, salt, and pepper until well combined and emulsified. Set aside.

Make the salad: Clean and dry 4 (27-ounce) glass mason jars with lids. Divide the ingredients evenly among the jars, layering in the following order: dressing (about 3½ tablespoons per jar), tomatoes, cucumber, onion, chicken, bacon, eggs, blue cheese, and lettuce. Press the lettuce gently to fit the jars without compacting it.
