Step 1

Put lime juice, mint leaves and sugar syrup in a blender (or in a jug with a stick blender). Whizz a few times (don’t blend for too long or the mint will become bitter), then strain into a cocktail shaker. Add white rum and plenty of ice, then shake vigorously.

Step 2

Strain into a cocktail glass and garnish with a mint sprig.
