Step by Step

Step 1

Cook broccoli in boiling water for 3 minutes. Cool in cold water. Set aside.

Bake the mushrooms in the oven at 180º C for 10 minutes. Set aside.

Step 3

Combine the milk, butter, salt, chopped garlic and nutmeg in a saucepan. Boil, then reduce the heat and pour in all the flour and mix well with a spatula without removing from the heat for 4 minutes.

Remove from the heat and transfer to a bowl.

Step 5

Add the black pepper and add the eggs, one at a time, incorporating each completely before adding the next.

Step 6

Finely chop mushrooms and broccoli and add to mixture. Mix well.

Step 7

With two spoons take small portions in the shape of balls or quenelle and fry in plenty of olive oil.
