When it comes to eggs, i am an over-medium kind of person. i like it a little runny but with some firmness. i remember the first time i tried to order over medium eggs at a restaurant i said – i’d like my egg in between over hard and sunnyside up 😂

Heat a non-stick frying pan over medium/low heat (8-inch or 10–inch works best). Add butter.

When the butter has melted, crack the eggs into the pan. Try not to overcrowd the pan with more than 2 eggs.

Cook the eggs over medium/low heat for 2-3 minutes or until the egg white begins to set, but isn’t completely cooked.

Step 4

Use a spatula to flip the eggs and let the cook for an additional 45 seconds- 1 minute allow the yolk to almost cook. The yolk should be jammy, not hard.

Step 5

Remove the eggs from the pan and repeat with the remaining eggs.

Step 6

Remove the eggs from the pan and enjoy with salt and pepper.

Tips and Warnings

  • What pan you use matters, we recommend using a non-stick skillet and still using butter.
  • You want a pan that has a slippery surface so the eggs are easy to move and flip. We do not recommend using a cast iron skillet.
  • Try not to overcrowd your eggs in the skillet. For more eggs, use a larger skillet.
  • We use butter as the fat to cook the eggs in so we end up with consistently cooked whites. If you like crispier edges on your egg whites, use olive oil.
