Step 1

In a small bowl, stir together the crème fraîche, soft cheese, wholegrain mustard, the lemon juice and chives.

Step 2

Take the smoked salmon and separate the slices; cut each into 6 strips. Halve the quails eggs.

Step 3

Take the crackers and spoon 1 tsp of the crème fraîche mixture onto each. Add a curl of smoked salmon and sit a halved quail’s egg on top. Sprinkle with some finely chopped chives and freshly ground black pepper, if liked. Serve immediately with lemon wedges for squeezing over.
