Step 1

Preheat the oven to 190˚C, gas mark 5. Toss the swede with the oil in a large roasting tin, season and roast for 50-55 minutes, stirring halfway through, until coloured and soft.

Step 2

Roughly crush the roast swede using a fork or the back of a spoon, adding the lemon juice as you go. Transfer to a serving dish and scatter with the remaining ingredients.
