Step by Step

Step 1

Chill 2 stemmed cocktail glasses in the freezer or fill with cold water and ice cubes. Remove 2 strawberry pieces from the pack and put the rest into a cocktail shaker. Using a muddler, crush the strawberries to a powder, then remove some and mix with the sugar on a small plate.

Step 2

Add the gin, sugar syrup, lemon juice and egg white to the shaker, then put the the lid on and shake for 1 minute. Add a handful of ice, secure the lid and shake until the outside is frosty.

Step 3

Tip out the ice cubes and water from the glasses, if using, then run the cut side of the juiced, reserved lemon half around each rim to dampen. Dip the rim into the strawberry-sugar mix so it coats the top of the glass.

Step 4

Strain the cocktail into the glasses, garnish with the reserved strawberry pieces and serve immediately, with a sprig of mint, if liked.
