Fry the pancetta on medium heat. Once cooked, retrieve, set aside, and chop into bite-sized pieces.

In a bowl, mix the eggs, cheese, and a pinch of salt and pepper together. Add the pancetta.

Grease a muffin tin well and fill 9 wells with egg mixture, about ¾ full per muffin.
