Add the olive oil and tomato paste into an 8×8-inch baking dish and whisk the ingredients together. Trim the tip of the head of garlic so the cloves remain intact. Add the onion, salt, pepper, tomatoes, and garlic to the dish and toss all of the ingredients together until coated.

Nestle two Boursin pucks into the tomatoes and cover. Bake for 25-30 minutes or until the cheese browns and the tomatoes have burst.

Remove the dip and carefully squeeze the garlic cloves out of the head. Use a fork to mash the garlic cloves and tomatoes. Then, stir everything together.
